Made peanut noodles today! :D

- sauce: mix chunky peanut butter, soy sauce, honey, and tabasco together to get a slightly sweet and sour taste.

- stir fry chicken with garlic

- mix together angel hair pasta with the peanut sauce, chicken, shredded carrots, and diced celery (I wanted cucumbers, but I didn’t have any - turned out to be a great substitute)

I spent nearly 40 minutes mincing onions into tiny pieces to make patties with grounded turkey. After a long day, I felt so relaxed from being completely focused on just cutting onions.

The patties didn’t work out, but I enjoyed cooking it anyways.

Oh I forgot, at one point when I was putting the patties into the pan of hot oil, the oil popped. I admit, I freaked out a bit then.

On Wednesday, Eric made orange chicken.

I looked up easy recipes for chicken and I found one for saute chicken, but it required lime juice. I decided to substitute lime juice and sugar with three Cuties mandarin my roommate bought.

- blend the mandarins into juice with mushy pulp with a food processor

- heat diced onions and garlic in pan, then add cubed chicken tenders

- mixed the mandarin juice, ketchup, soy sauce, and pepper, then simmer it with the chicken

Still figuring out the ratio for the sauce. I think I add just a little bit too much soy sauce this time; it overpowered the tangy flavor of the mandarins.

Proud creation nevertheless :D

I been riding the bus to work everyday. Starting a couple days ago I would ride the bus with my headphones on, even though I don’t own a MP3 player. I would just bob and hum along to the music in my head.

Super stroked to see Ray!

- Had dinner at Wilbur Hall. I was very impressed by the Pho bar. Ray wasn’t, however.

- Took the picture above. We were once Asian tourists. Now I still am. We got an Asian tourists couple to take the picture for us.

- Went to Taiko concert under Sophie’s recommendation. Amazing. Bing Concert Hall, gorgeous.

- Stayed a night at J-row. Met Ray’s dorm mates.

- Woke up to go to church with Ray. C3 church: very interesting urban atmosphere and a young professional undertone.

- Great weekend. Muchos gracias to Ray :)

Like usual today in lab we had to split into groups of threes. Usually I get away with working in a group of four with my two friends and an annoying tag along. However, today the professor called us out and pointed out a group of two, since one of their usual members weren’t here. I volunteered to move over. I was a bit annoyed at first, till I realized the girl in the group was cute.

What an rare opportunity to work with a female in compsci lab. CS major success = spoken to a girl in class.

JK I am just exaggerating. It’s not even that bad. Its like 30% girls at least…

The other day I was looking for a VGA cable, and after looking for it for a while I asked my mom whether if she knew. “It’s probably in the basket.” The basket is where we put the random trinkets and miscellaneous things that accumulate over time. As I was digging through it, instead of the cable, I found my high school diploma. It was shocking to me to see the certificate that symbolizes one of my significant achievement was placed in the basket. Before I left for college, it was placed in the cupboard in our dinning room that showcases my mom’s mug collection, souvenirs, and at times medals my sister and I got. I brought the diploma back into my room and placed it on my nightstand temporarily.

A couple days latter it casually came up in a conversation with my mom. She responded with out hesitation “It was cluttering the cupboard and guests were coming over, so I just cleaned out random things from the cupboard. It doesn’t matter anyways.” It was just shocking to hear. It confirmed that indeed the diploma end up in the basket with deliberation.
